Soup is the Recipe for a Cold Day

I love soup in the winter.
I think there is something so comforting about curling up with a hot
bowl of soup and some homemade bread, especially on a very cold day.
We had such a mild November and December, I wasn’t really in
the mood for soup all that much, which is funny because I usually will make a
big pot of soup every week. However,
winter has definitely arrived, and it is COLD!

January is always a slim month when it comes to groceries for us. We spend a lot of money around Christmas, for a big Christmas Eve party, then Christmas Day and even New Year’s. But, once January comes along, we need to back off on the expenses, and one place that we are able to cut back is groceries.
Soup is an inexpensive and healthy option after all of the
indulgence of the holidays. And it is something that I want to get back in the habit of making weekly.

I rarely ever will follow a recipe for soup. Instead I will throw a bunch of ingredients
together and call it good. Once in a
while I come up with a soup my family really enjoys. That was the case this week.

I ended up making a vegetable soup on Sunday, and my husband
asked me to make it again on Tuesday, so obviously it was good!

Vegetable Soup
1 32oz box of chicken
broth (I use Pacific Organic)

1 sweet onion, chopped
2-3 cloves garlic,
minced

4 carrots, peeled and
chopped

2 sweet potatoes,
peeled and diced

1 28 oz can crushed
tomatoes

8 oz frozen green
beans

8 oz fresh spinach
½ tsp salt
½ tsp red pepper
flakes (or to taste)

1 TBSP coconut oil (or
whatever oil you have on hand)

- Put onions, garlic and
carrots into the pot and sprinkle with half of the salt and all the red pepper
flakes, sauté on medium high heat for 3-4 minutes. - Add sweet potatoes, stir for 1 minute then
add chicken broth. - Turn heat down and
simmer until sweet potatoes are fork tender. - Add crushed tomatoes, green beans, and spinach and the rest of the salt.
- Simmer another 10 minutes.
- Serve with a little bit of shredded parmesan
cheese and your favorite crusty bread.
I split this up into a bunch of Ziploc containers for lunches this week.

I love creamy soups and those packed with lots of vegetables. I make sweet potato and pumpkin soup a lot. I also separate them into containers for lunch and dinners.

I love soup in the winter but sadly, I don't make it often. I've been totally into casseroles and one dish meals.

I completely agree–having a nice hot bowl of soup is necessary when it's a cold winter day! We've had unusually cold weather here in Phoenix, so I will plan on having more soup for sure (since I know it will warm me right up!)
I always look forward to the temperature being cool enough to justify soup. Add some cornbread and I'm in heaven!

Soup is my favourite meal during the winter and warms me up after a day in the cold. I like cold summer soups too.

My mom makes a soup like this and I love it! I always love a good tomato soup with grilled cheese though
yum! I love tomato soup and grilled cheese. For some reason my kids don't like grilled cheese (ridiculous, I know), but I am hoping to break them one of these days!
I am glad my Mister is sleeping to not have seen this! He likes soup far too much…and he likes vegetables far too much! I'm slowly coming around to soup, but for the longest time I never really enjoyed them. Or, rather, I swore it off completely. But, somehow, soup is amazing – we had grilled cheese and tomato soup the other night, I had chicken noodle for lunch about half an hour ago, and we're having nacho soup next week!
My most favorite though is potato soup. I found an amazing recipe last year that I'm going to have to break out again. It is amazing.

I make this type of soup A LOT. It's a staple in our house as well, especially this type of year. I typically use the same base but throw in whatever veggies we have on hand, it all works so well! We are big on the spinach though, that's usually a must in there!
The spinach…I love the spinach! I rarely put it in soup, I have no idea why. I usually go for kale, but we have none, so spinach it was, and it was delicious!
