The past couple of weeks have introduced a lot of potatoes into our farmers’ market, and I can’t seem to pass up freshly dug potatoes! It is a perfect snack in the afternoon, especially since it has been so much cooler here lately. These are just roasted in the oven with a little olive oil/salt/dill. Delicious! I really enjoy putting a ton of cayenne pepper on mine…but the kids don’t agree with the level of heat I like, so I end up tossing them with some cayenne after I cook them.
